Well, that all depends what you're into. If you're looking for a more traditional experience, I'd say...

Bionic Commando
Castlevania 2: Belmont's Revenge (Castlevania Adventure is pretty bad)
Chalvo 55
Duck Tales (level design is a little different from the NES version)
Final Fantasy Adventure
Gargoyle's Quest
Gradius: The Interstellar Assault (didn't care for the other)
Great Greed (great writing, too... and terrible music!)
Kid Icarus: Of Myths and Monsters
Mario's Picross
all of the Mega Man games, but especially V
Rolan's Curse (1 is almost like a living board game; 2 is a more traditional Action-Adventure)
Sword of Hope 2 (Dragon Warrior meets Shadowgate)
Tail Gator
TMNT 3: Radical Rescue (a Platventure; not like the other 2)
Tetris Blast (I don't even like Tetris, and I love this)
Ultima: Runes of Virtue (only the first one)

To me, though, Game Boy is about discovery; strange worlds that could only exist in that weird little monochrome matrix of dots. The sorts of places I discovered with an old friend of mine when we spent that evening at his family's cabin deep in the woods by the lake. Places that make you question whether it was all just a dream. For that, I'd say

Adventures of Star Saver
Cosmo Tank
Kindgom Crusade (almost like living chess?)
Maru's Mission

I'd add Link's Awakening to that list, but I'm sure you're familiar with it. If we're extending the list to Game Boy Color, I'd add

Bionic Commando: Elite Forces (only if you've mastered that bionic arm, though; it's brutal)
Daikatana (overhead Action title that's a lot better than the PC original)
Deja Vu 1&2 (neat visuals, and 2 is hard to come by, so having them on the same cart is great)
Ganbare Goemon: Hoshizorashi Dynamites Arawaru
Quest RPG: Brian's Journey (a very neat conversion of Quest 64, plus it's actually finished)

If you want more details on any of them, I have mini-reviews for every game I've ever finished, or you could always just hit me up. Game Boy is such a neat, underexplored system!
