Wow, diablo 3 killed how much I check t his.

Actually, the eidolans are kinda useless for most things, since they ruin your rhythm. The only times you want to use them are as a reset (since they revive everyone), but you've screwed up 5 star if you do that, and to knock down adamantoises for an easy death kill by vanille. Using the characters unique skills (highwind, heaven fist, death, etc), is far more important for doing the optional stuff.

Yeah, and really all the optionals aren't too tough once you figure out the 'trick' to them.

Yeah, though once you get used to the post game rhythm for missions (debuffers to get the meter started and reduce their stats, then rav/rav/rav for staggering, then com/com/com for damage), things go a lot easier. Once everyone has all classes maxed, its far more effective to go for 3 of a kind of everything (Barring junk random encounters)

I 5 starred Orphen after I finished all the missions. The last mission gives you an accessory that increases the required time for 5 starring.

Don't worry so much about the Trapo's until after you beat the game, you don't need Tier 3 weapons to beat the final boss. Hell, the bosses before him are much tougher (though farming sacrifices is great cash)
